Executive Sous Chef (Tokyo)

Our client, a luxury international hotel in Tokyo is currently looking for an Executive Sous Chef.

This role will be
• Responsible for assisting the executive chef in the planning, directing, controlling, coordinating and
participating in the daily activities of food preparation in all the kitchens. Assists the Executive Chef to provide
the highest quality of food within cost percentage of the hotel.

Key Performance Indicators:
• Enthusiastic about cooking.
• Knowledge in scratch cooking (basic knowledge of stocks and sauces)
• Extensive culinary knowledge in both classical and current culinary trends
• Extensive experience in management of cooks and stewards
• 6-7 years management experience in high quality hotel or restaurant establishment
• Sanitation certificate
• Diploma from culinary school or apprenticeship (or equivalent)
• Experience in Asian and/or European countries
• Minimum 10 years’ experience in 5 star hotel or equal restaurant establishments
• 3-4 years sous chef experience in 5 star hotel or equal restaurant establishment.
• Able to work in high stress environment. Ability to remain cool under extreme pressure.
• Command of English Language, both written and oral
Japanese speaking preferred
